2- 6-8oz Lamb Shoulder Blade Chops
1 teaspoon olive oil
1/4 teaspoon sea or coarse salt
1/2 teaspoon lemon pepper
2 teaspoon fresh Rosemary, chopped
Juice from 1/3 of lemon
Dashes of Worcestershire Sauce
Preheat oven broiler.
Place lamb chops on a plate. Add olive oil, salt, lemon pepper, Rosemary and lemon juice to a bowl. Mix well. Rub mixture on both sides of meat.
Place on oven pan and under oven broiler. After 10 minutes turn lamb chops over. Let broil an additional 10 minutes. Turn off broiler and turn oven to 425 degrees. Let bake for 10 minutes. Remove from oven.
Before serving add dashes of Worcestershire Sauce to lamb chops.

"No wire hangers, EVER" is the classic line from the film "Mommie Dearest." It's campy and over-acted by actress Faye Dunaway, and I added it to my list of films that are so bad, they're good. It was Joan Crawford's world and the rest of us just lived in it, according to her daughter Christina Crawford, the author of the bestselling book "Mommie Dearest" from which the film was based. But, I have a strong feeling that Ms. Crawford, who was a "true" star in the early days of Hollywood, did not get the respect she deserved.
Our recipe for "Spicy and Sweet Baked Pork Kabobs on Wire Skewers" are moist and spicy with a hint of sweetness. Easy to prepare and beautiful to the eyes, this is one time Ms. Crawford would make an exception to her "no wire ever" rule! Marinade for Pork: Mix all marinade ingredients in a large bowl. Cover and refrigerate overnight.
1 -1/2 lbs. thick Pork Butt or Chops, cut into 1 -1/2 inch cubes
1 cup pineapple juice
Juice from 1/2 lemon
1 -1/2 tsp. Hunan Red Chili Sauce
1 Tbs. Worcestershire Sauce
4 fresh springs of thyme
1 tsp. coarse salt
½ tsp. black pepper
1/4 cup olive oil
1 Tbs. plus 1 tsp. red wine vinegar
Sauce:
2 Tbs. butter
3 Tbs. flour
3/4 cup pineapple juice
1/2 cup water
2 Tbs. lemon juice
1 tsp. Hunan Red Chili Sauce
1/4 cup Spanish Olives
Dashes salt and black pepper
Bell Peppers and Onions: 1/2 red bell pepper
1/2 green bell pepper
1/2 red onion
Drizzle of olive oil
Dashes of salt and black pepper
Add butter to sauce pan over medium high heat. Add flour. Stir until flour turns golden brown. Add pineapple juice, water, lemon juice, Hunan Red Chili Sauce, olives, salt and black pepper. Stir. Lower heat to a simmer and cook for 7 minutes.
Mix red and green bell peppers, onions, olive oil, salt and black pepper in a bowl. Set aside.
Preheat oven to 400 degrees.
Alternate peppers, onion and pork on 4 wire skewers. Place on baking sheet and bake for 15 minutes. Remove from oven and add sauce. Return to oven and bake an additional 10 minutes.

Our recipe for Lemon and Herb Roaster Chicken with Country Lemon Sauce celebrates all things perfect for a bride's special day. Down-home goodness done with class and style, like our "Bridesmaids," good to the very end!
Preheat oven to 350 degrees
1 Roaster Chicken (over 5 lbs) clean, and remove excess fat, pat dry - Set aside chicken neck, liver, and gizzard.
Rub for Roaster Chicken
Mix in a bowl -
3 Tablespoons olive oil
2 Tablespoons chopped fresh parsley
1 Tablespoon Marjoram
1-1/2 teaspoon salt
Juice from 2 lemons
2 Tablespoons lemon zest
1/2 teaspoon freshly grounded black pepper
For bottom of roaster -
3 cups water
2 Tablespoons liquid smoke
Use your hands to rub all the mixture on the inside and outside of roaster chicken. Place in roaster pan on the rack. Add water and liquid smoke to bottom of pan. Cover and bake for 1-1/2 hours. Remove cover and return to oven for 30 minutes.
Country Lemon Sauce
While roaster chicken is baking, prepare the Country Lemon Sauce.
Add the the following to a large sauce pan over high heat.
4 cups water
Neck, liver and gizzard from roaster chicken
1/3 cup chopped onions
1/3 cup chopped celery
3 chopped garlic cloves
1/3 teaspoon salt
1/2 teaspoon black pepper
1 cup chicken stock
After the pot boils, reduce heat and let cook for 1 hour.
After the hour, remove neck, liver and gizzard. Chop meat and remove all bones, set aside.
Add the following to a clean sauce over high heat:
2 Tablespoons butter
2 Tablespoons flour
1 teaspoon lemon zest
3/4 teaspoon lemon pepper
Stir consistently. After butter browns slightly, add the neck, liver, gizzard and all the liquid from the Country Lemon Sauce pot. Bring to a boil. Lower heat and let simmer for 12 minutes.
"Madea's Big Happy Family" is another Tyler Perry laugh fest with a message for everyone. Madea comes to the aid of her beloved niece Shirley (Loretta Devine) who has health problems and wants to bring her children together. Our favorite mother, grandmother and all-around outrageous lady knows just what to do - and she does it all in "Madea's Big Happy Family."
Our recipe for Stuffed Pork Chops celebrates Madea's love for all things pork and delicious. These thick cut chops are stuffed with dates, bacon, fresh herbs and spices, and lightly covered with a date sauce that brings it all together, fabulously!
Preheat oven to 350 degrees.
Date Stuffing - Mix well in a bowl and set-aside
2 cooked strips thick cut bacon, chopped
1 Tablespoon celery, finely chopped
1 Tablespoon shallots, chopped
1 Tablespoon fresh parsley, chopped
1 Tablespoon packaged dates, finely chopped
1/4 teaspoon cumin
1/2 cup plain bread crumbs
1/4 cup water
Dash salt and freshly grounded black pepper
2 Thick Cut Pork Chops (at least 1 1/2 lbs. total)
Season both sides of chops with dashes of
Paprika
Cumin
Seasoned Salt
Freshly grounded black pepper
Make a deep cut in the middle and down the sides to the bone of each pork chop to make the pocket. Add half of the stuffing to each pork chop pocket.
Add pork chops to a baking dish. Drizzle lightly with olive oil. Cover and bake for 40 minutes or until done.
Sauce for Stuffed Pork Chops
Drippings from baking dish after pork chops have been baked
1 Tablespoon flour mixed with 1/2 cup water
1 Tablespoon dates, chopped
Dashes freshly ground black pepper
Dash ground cayenne pepper
Add all the sauce ingredients to a sauce pan over high heat. Bring to a boil. lower heat and simmer for 10 minutes.
"Cloudy with a Chance of Meatballs" is the most delicious animated film ever made. Yummy food raining down from the sky, thanks to Flint's (voice of Bill Hader) machine that turns water into food. The food is delicious, but the town's a mess! The one is fun for the whole family.
Our recipe for Blue Cheese Meatballs with Tomatoes and Basil will satisfy even the pickiest eater's cravings. Moist meatballs wrapped around a blue cheese center and covered with tomatoes and basil, Italian style. Here's wishing you a "Cloudy with a Chance of Meatballs" day!
Blue Cheese Meatballs
10 oz. ground Sirloin
1/4 cup milk
Dash Sea Salt
Dashes freshly ground black pepper
1 garlic clove, minced
9 Tablespoons Blue Cheese Crumbles
In a bowl, combine the ground sirloin, milk, sea salt, black pepper and garlic. Mix well. Make 9 equal sized meatballs. Use your thumb to make a hole in the middle of each meatball. Add 1 teaspoon of Blue Cheese Crumbles to each meatball and close.
Add meatballs to a baking dish. Place in 375 degree oven for 20 minutes.
Tomatoes and Basil
2 Tablespoons sun dried tomatoes in extra virgin olive oil, chopped
2 fresh tomatoes, chopped, (remove outer skin)
1 Tablespoon fresh Basil, chopped
1 garlic clove, chopped
1 Tablespoon, shallots, chopped
1 Tablespoon Red Wine Vinegar
Dash sugar
Dash Sea Salt
Dashes freshly grounded black pepper
Add all tomatoes and basil ingredients to a small sauce pan over medium high heat. Stir. Cover and lower heat to a simmer. Cook 15 to 18 minutes.
Picture 1 - Serve Blue Cheese Meatballs in soft sub or French bread with mozzarella or provolone cheese topped with tomatoes and basil.
"Unstoppable" is a film about a runaway train carrying toxic chemicals. The Engineer, Frank, is played by the handsome Denzel Washington and the train's Conductor, Will, is played by the super-fine Chris Pine. They are in a race against time to stop the runaway train that is traveling at top speed towards a town. If they don't, the end result would be - catastrophic!
"Unstoppable" is all about speed, and our Warm Shrimp Salad is super fast! You can prepare this dish in a matter of minutes. It makes a great appetizer or main dish for all shrimp lovers. It is light, totally satisfying and "unstoppable."
10 Colossal or Extra Jumbo Shrimp (cleaned with vein removed, leave outer shell on)
1 Tablespoon Chipotle Pepper Rub
2 Tablespoons olive oil
1 -1/3 cup semi-cooked Tri Colored Rotini (vegetable) Pasta (cook pasta for only 5 minutes)
1 -1/2 cup Petite Whole String Beans (fresh or frozen)
Juice from 1/2 lemon
2 garlic cloves, minced
Dash freshly ground black pepper
1 teaspoon Hunan Red Chili Sauce
1/4 cup water
Add Chipotle and Pepper Seasoning to shrimp in bowl. Mix well. Over high heat add olive oil to a wok or large saute pan. Add shrimp. Stir and cook for 2 minutes. Add Tri Colored Rotini, Petite Whole String Beans, lemon juice, garlic, black pepper, Hunan Red Chili Sauce and water. Stir and cook for 5 minutes.
Beautiful Hawaii is the home of one of my favorite fruits, the Pineapple. She (yes I said she) is elegant and sweet with just the right amount of kick to keep things interesting. Our uniquely delicious Pineapple Baby Back Ribs' spicy sweetness elevates it out of the ordinary and into your list of very special recipes. No bottled or added reddish barbecue sauce to cover-up these bang-in' baby backs!
Our featured film, "50 First Dates" takes place in Hawaii, the land of paradise and the fabulous pineapple. Henry (Adam Sandler) is a "Player" until he meets and falls for the beautiful Lucy (Drew Barrymore). One huge problem, Lucy has short term memory loss and forgets him the next day. If you like romantic comedies, this one is for you, and if you love Pineapple Baby Back Ribs, here is your recipe!
2 -1/2 teaspoon Barbecue Seasoning
1/4 teaspoon Cayenne Seasoning
dashes Sea or other course salt
dashes freshly ground black pepper
1/2 tsp. ground cumin
1/2 cup Pineapple Juice (no sugar)
3 sprigs of fresh thyme
3 Tbs. Liquid Smoke
2 cups water
Sauce:
1/2 cup pineapple
1 Tbs. brown sugar
2 Tbs. Worcestershire sauce
1 Tbs. Dijon mustard
1 tsp. barbecue seasoning
1 Tbs. apple cider vinegar
Score the back of the baby back ribs against the bones (don't cut all the way through). Place ribs on an extra large piece of heavy duty foil. Season ribs with barbecue and cayenne seasoning, salt, black pepper and cumin. Rub both sides well. Place foil in a large dish and add pineapple juice. Close tightly and refrigerate overnight or for several hours.
Combine sauce ingredients in blender or food processor on high speed until smooth. Set aside in refrigerator.
Preheat oven to 350 degrees.
Combine Liquid Smoke, water and fresh thyme in a roasting pan with a rack. Remove ribs from marinade and place on rack over liquid. Discard remaining marinade. Cover and bake for 1 1/2 hours.
Remove from oven. Using a pastry brush, cover ribs completely with sauce. Turn oven up to 400 degrees. Place ribs back in oven, uncovered. Bake an additional 20 minutes.
Optional - Top with parsley, barbecue seasoning or/and grilled pineapple.
The film "300" tells the story of the Battle of Thermopylae in 480 B.C. Persians are ruled by King Xerxes who has taken over some of the Hellenic cities, and now threaten Sparta and Athens. King Leonidas is played by Gerald Butler who will have to sacrifice himself for Sparta or watch his beloved city burn. Leonidas forms an army of 300 Spartan warriors to block the narrow passage of Thermopylae where Xerxes intends to reach Hellas. The story depicts the epic last stand of the finest Spartan soldiers who are aware of their fate, but because of honor and pride, see the battle as their duty.
Our recipe for Roasted Turkey with Fresh Rosemary is just the right meal to eat before your epic battles. It's full of protein, deliciously filling, not too heavy, and has just the right about of spices to motivate you to kick ass! All my medieval friends just love this turkey recipe, and so will you!
2 -1/2 lbs turkey parts (thighs legs, wings or breast) I used thighs
2 sprigs of fresh rosemary
3/4 teaspoon seasoned salt
1 teaspoon lemon pepper
3/4 teaspoon Essence of Emeril's Seasoning
1 Tablespoon soft butter
2 Tablespoons Worcestershire Sauce
2 Tablespoons apple cider vinegar
1 Tablespoon hot sauce
1 cup water mixed with 2 teaspoons flour
Preheat oven 350 degrees.
Rub butter all over turkey. Add seasoned salt, lemon pepper, and Essence of Emeril's Seasoning to all sides of turkey. Place in oven dish. Add Rosemary on top. Cover and bake for 2 hours.
Remove dish from oven. Carefully drain all the liquid and fat. Add Worcestershire Sauce, apple cider vinegar and hot sauce to turkey. Return to oven, uncovered and bake an additional 20 minutes.
Remove turkey from dish. Add drippings to a sauce pan, and the Rosemary. Turn heat up to high and add water and flour mixture. Bring to a boil, then let simmer for 3 minutes. Serve over turkey.
Reel Good Recipes concludes Black History Month with the 1975 classic "Cooley High" starring Glynn Turman and Lawrence Hilton-Jacobs. This film brings back bittersweet memories for those of us who remember the music, youth and love of the decade like no other, the 1960s.

No one made better burgers - big, juicy and bold, just like Martha.Let this cheeseburger take you back to a time when food was good, simple and easy, even when life was not.
1 shallot, thinly sliced
1 teaspoon butter
1 teaspoon red wine vinegar
Dash seasoned salt
Dash lemon pepper
Dash crushed red pepper
Add butter to a saute pan over medium high heat. Add shallots, red wine vinegar, dashes of seasoned salt, lemon pepper, and crushed red pepper. Saute for 3 minutes or until tender. Set aside.
1/2 lb. ground sirloin
1/4 cup milk

Dash salt
Dashes freshly ground black pepper
2 slices provolone cheese
2 slices cheddar cheese
6 crunchy waffle fries - prepared according to package directions
2 gourmet hamburger buns
Optional toppings - shredded lettuce, Dijon mustard, ketchup, jalapeno peppers, light mayo.
Add ground sirloin, milk, seasoned salt, salt and black pepper to mixing bowl. Mix well. Make four equally sized thin burgers. Add 1 slice of provolone cheese to two burgers. Top with the other burger and press closed. Preheat a grill or large saute pan. Cook for about 3 minutes on each side. Add 1 slice of cheddar cheese to each burger. Turn off heat, cover and let rest in pan for 5 minutes (cheeseburgers should be medium well, but you can adjust the cooking time to your liking).
Warm 2 gourmet hamburger buns. Add a cheeseburger to each bun. Top with sauteed shallots and waffle fries. Optional: Add lettuce, mustard, ketchup, light mayo, jalapeno peppers or other condiments.
Today's post is dedicated to the groundbreaking 1977 television mini-series, "Roots", which is based on Alex Haley's Pulitzer Prize winning book. "Roots" is such an incredible achievement that I struggled to develop a recipe that is special enough, important enough, for this film, because it has touch me and millions of other viewers, regardless of race or age.
I finally realized I needed to get down to my own "roots". I had already blogged about the perfect recipe for this film, my mother's Sweet Potato Pie. Her recipe, which called for a "pinch" of this and a "handful" or "swallow" of that, is based on the oral handing down of the recipe from her mother, and so on. "Lackawanna Blues" is the award winning HBO film based on the true story of actor Ruben Santiago Jr., and his relationship with his guardian Rachel "Nanny" Crosby. During the 1950's and 1960's in Lackawanna, New York, Ruben's parents separated, but he live with Nanny and her younger husband Bill in her boarding house. Ruben grew up in a world of music, and all the "characters" in Nanny's boarding house. Nanny is played by Law and Order star S. Epatha Merkerson, who won the Emmy and Golden Globe for her dynamic performance. A must-see film! Our recipe for Oven Fried Catfish pays tribune to Nanny's Friday night fish fry dinners, but our recipe will be baked with a crunch, not fried. All the soulful taste with less fat. Nanny would be proud!
Moisten catfish with milk. Add lemon pepper to both sides. Place Bakin' Miracle Seasoned Coating Mix onto a plate. Coat both sides of catfish and shake off any excess. Coat non-stick baking sheet with olive oil. Place catfish on sheet and bake for 15 minutes. Turn catfish over and bake another 10 minutes.
Remove from oven and squeeze juice from a fresh lemon slice.

4 chicken pieces, cleaned with excess fat removed (Use your favorite parts of the chicken. I used chicken thighs)
1 egg, slightly beaten
1/2 teaspoon Season Salt
Pinch of salt
1/8 teaspoon Cayenne Pepper, grounded
1/4 teaspoon Thyme Leaves
1/8 teaspoon Paprika
1/2 teaspoon Lemon Pepper
1 cup all purpose flour
1/4 teaspoon Emeril's Original Essence Seasoning
1 -1/2 cup vegetable oil
Add egg, chicken, Season Salt, pinch of salt, Cayenne Pepper, Thyme Leaves, Paprika, and Lemon Pepper to a mixing bowl. Mix well. Set aside.
Add flour and Emeril's Original Essence Seasoning to a bowl. Mix. Add chicken one piece at a time. Cover well and shake off excess.
Heat large skillet over medium high heat. Add vegetable oil. Heat oil until hot. Add chicken. With a large skillet you should be able to fry 4 pieces without over crowding pan. Keep chicken frying over medium heat (don't cook too fast). Cook on each side for approximately 13 minutes, there should be no bleeding. Chicken should be a beautiful golden brown.

2 beef shanks (about 1-1/2 lbs)
Dashes salt and freshly grounded black pepper
1 Tablespoon olive oil
1/2 cup red wine
1 cup chicken stock
2 bay leaves
2 celery stalks, chopped
2 garlic cloves, chopped
1/3 red onion, chopped
Dash salt
6 baby mushrooms (cleaned and sliced)
2 tomatoes, skin removed and cut into cubes
1 teaspoon Chili Garlic Sauce
1 Tablespoon red wine vinegar
1/3 cup water mixed with 2 teaspoons of flour for thickening
8 oz of fettuccine (cooked according to package directions) after draining, add 2 Tablespoons of olive oil and dashes of salt. Mix well
Optional - Top finished dish with pinches of fresh cilantro
Add salt and black pepper to beef shanks. Place large sauce pan over high heat. Add olive oil. Brown both sides of beef. Add red wine, chicken stock, bay leaves, celery, garlic, red onions, and dash of salt. Bring to a boil, cover and lower heat to a simmer. Cook for 1 hour and 15 minutes. Turn heat back up to high and add mushrooms, tomatoes, Chili Garlic Sauce, red wine vinegar, and water and flour mixture. After boil, cover and lower heat to a simmer for 10 minutes.
Serve Beef and Mushrooms over fettuccine and (optional) pinches of fresh cilantro.
Game Day Chicken Chimichangas - 3 Ways is the perfect food for football fans everywhere. It's a crowd pleaser that will have everyone cheering "touchdown!" This recipe will make up to 6, but will serve 12 when sliced. You may want to do multiple batches for your hungry crowd. Marinate Chicken:
4 boneless, skinless chicken thighs, cut into 1 inch cubes
1 Tablespoon Chipotle Pepper Rub
Rub chicken with Chipotle Pepper Rub in a mixing bowl. Cover and refrigerate for at least 2 hours.
Cook Chicken:
2 Tablespoons olive oil
1 garlic, minced
Juice from 1/2 lime
1 teaspoon hot sauce
1 Tablespoon fresh cilantro, chopped
1/3 cup water mixed with 1 Tablespoon flour
Heat olive oil in a large saute pan over medium high heat. Stir in chicken. Add garlic, lime juice, hot sauce, and cilantro. Stir for 5 minutes. Turn up heat to high and stir in water and flour mixture. Cook 3 additional minutes. Set aside and let cool slightly.
Assemble Chicken Chimichangas:
6 flour tortillas
Preheat oven to 300 degrees. Wrap tortillas together in foil. Bake in the oven for 5 minutes.
To warmed tortilla, add:
1/2 cup cooked chicken
1 Tablespoon green onion, chopped
Pinch of cilantro, chopped
Add the following additional ingredients for mild, spicy, or hot chimichangas:
Mild
2 Tablespoons refried beans
1/4 cup cheddar cheese, shredded
Spicy
2 Tablespoons medium heat chunky salsa
1/4 cup Monterey Jack Cheese, shredded
Hot
1 Tablespoon refried beans
1/4 cup Monterey Jack Cheese, shredded
1 Tablespoon medium heat chunky salsa
1 Tablespoon jalapeno peppers, chopped
Lift the bottom edge of the tortilla and roll it over the filling to secure it. Fold in both sides and continue rolling until you reach the opposite end. Secure with a toothpick to close. Repeat with remaining tortillas. Set aside.
Fry Chicken Chimichangas:
1 cup of vegetable oil for pan frying
In a large skillet, heat vegetable oil over medium high heat. Slowly place chimichangas in skillet and cook 2 minutes on each side or until golden brown. Remove from oil, drain on paper towels.
