Spicy Superbowl Chicken Wings



Congratulation New Orleans Saints




10 chicken wings

1 jalapeno pepper, minced
1 teaspoon orange zest
Juice from 1 orange
Juice from 1/2 lemon
1 Tablespoon Chili Garlic Sauce
1 Tablespoons fresh Rosemary, chopped
1/4 teaspoon salt
Dashes black pepper
4 Tablespoons olive oil

Add all the ingredients above to a mixing bowl. Mix and cover chicken wings completely. Pour all these ingredients into a large plastic zip lock baggie. Refrigerate for 3 hours.

Preheat oven to 375 degrees.

Spray cookie sheet with Pam or other non-stick spray. Place chickens wings on cookie sheet, and discard the marinated. Bake for 40 minutes and turn each chicken wing over. Continue baking for an additional 15 minutes.

Remove from oven and place on paper towel.

Optional, add dash of salt

Serve with salsa, tortilla chips, strips of celery, red and green bell peppers.

Our recipe for Spicy Superbowl Chicken Wings will give everyone something to cheer about, even if your favorite team isn't winning. This recipe is full of bold flavors, and served with salsa, peppers and tortilla chips will score a "touchdown." Serve our wings at your Superbowl party and you will be the big winner.

My hometown is Washington DC, and the Washington Redskins will always be my favorite team. They are three times Superbowl Champions. Please enjoy this video clip from Superbowl XXII. Quarterback Doug Williams was named the game MVP.  He is a great quarterback who had to overcome more than his share of obstacles. Through hard-work, prayer, and sheer determination, he made a way out of no-way. He got injured during the Superbowl, and had to reached down deep in his heart and soul. It was truly a miracle. Not only did he overcome his injury, but he broke scoring records during the second quarter of the game. Sounds like a great sports movie, but its true life!

Buttermilk Cheddar and Garlic Biscuits

4 cups Bisquick Biscuit mix
1 cup sharp cheddar cheese, shredded
2 cups buttermilk
1 Tablespoon garlic powder
6 Tablespoons butter, melted
1 -1/2 Tablespoons fresh parsley, chopped

Preheat oven to 425 degrees

Mix butter and parsley together and set aside.

Add Bisquick and garlic powder to a strainer and shake into a large mixing bowl. Add buttermilk and cheddar cheese. Stir until mixed (about 30 seconds), do not over mix. Spoon large Tablespoons onto a greased (or use a non-stick spray, such as Pam) cookie sheet, about an inch apart. Smooth down tops to prevent hard points from forming. Bake for 12 minutes or until lightly golden.

Once the biscuits are done, brush with butter and parsley.

Serve hot.

Makes 20 biscuits

Best Chocolate Chunk and Hazelnut Flavored Cookies Ever!




1 stick (1/2 cup) butter, softened
1 stick (1/2 cup)  margarine, softened
1/2 cup granulated sugar
1 -1/2 cups packed dark brown sugar
2 eggs, room temperature
1 teaspoon vanilla
2 -1/2 Tablespoons Kahlua' Hazelnut Liqueur
2 -1/2 cups flour, all purpose
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 -11.5 ounce bag Nestle Semi-Sweet Chocolate Chunks
1 Tablespoons milk

Preheat oven to 350 degrees

Add flour, salt, baking powder, and baking soda to a strainer or sifter. Shake or sift this mixture into a large bowl. Set aside.

Place in an electric mixer, butter, margarine, eggs, sugar, vanilla, and Kahlua' Hazelnut Liquer. Mix until smooth, but do not over mix.

Gradually add the flour mixture to the butter mixture. Add milk and chocolate chunks. Stir.

Use a Tablespoon to drop cookie dough onto an ungreased cookie sheet. Space about an inch apart. Bake for 13 minutes or until lightly golden.

Makes 2 -1/2 dozen
*Serve Warm

Our cookies are rich, soulful, and will have you singing a sweet tone. This is one of my very favorite recipes. We have given the chocolate chip cookie a flavor lift with semi-sweet chocolate chunks, and a special kicker, Hazelnut Liqueur. They will have you doing the moonwalk. Great music and great dessert, "This Is It."

Greek Chicken with Oregano and Olive Oil




3 pound chicken, cut-up (clean and remove excess skin and fat, pat dry)
1/2 cup olive oil
1/4 teaspoon oregano flakes
Juice from 2 lemons
Dashes of salt
Dashes of oregano
2 Tablespoons olive oil
Juice from 1/2 lemon
1 Tablespoon parsley flakes
6 white potatoes, peeled, washed and cut quarter lengthwise

Place chicken in a bowl and add 1/2 cup olive oil, 1/4 teaspoons oregano flakes, and dashes of salt. Use your dry hands to rub ingredients on chicken. Add juice from 2 lemons, mix and place in a large plastic freezer bag. Refrigerate for at least 3 hours.

Preheat oven to 350 degrees

Place marinated chicken with juices in roaster pan. Bake uncovered for 35 minutes. Remove from oven and add the potatoes. Add juice from 1/2 lemon, parsley flakes, 2 Tablespoons of olive oil and dashes of oregano and salt. Return to oven and continue baking uncovered for 40 minutes. Chicken should be lightly golden and potatoes fork tender.

Optional, serve with green salad and feta cheese on the side.

Chipotle Chicken Twisters








Add the following ingredients to a bowl, mix. Marinate in the refrigerator for 1 hour.
2 chicken breasts, boneless and skinless. Rinsed, patted dry and cut into thin strips
2 Tablespoons Chipotle Pepper Rub
1 Tablespoon olive oil

Mix these ingredients in a bowl, and set aside:
4 ounces low fat cream cheese
2 celery stalks with leaves, finely chopped
1/4 cup onion, finely chopped
2 garlic cloves, minced
1/3 cup fresh parsley
Juice from 1 lime
Dash salt and black pepper

12 egg roll wrappers
1 egg, beaten in bowl. Set aside
1 Tablespoon vegetable oil to stir-fry chicken
3/4 cup vegetable oil to cook Chipotle Chicken Twisters in wok or fry pan

Heat wok or fry pan over high heat. Add 1 Tablespoon vegetable oil. Stir-fry chicken for 4 minutes. Place in a bowl. Let cool for 10 minutes.

To assemble the Chipotle Chicken Twisters:
Use 2 egg rolls for each twister


Place the 6 egg roll wrappers in front of you to form a diamond shape. Spread 1 tablespoon of cream cheese mixture onto each egg roll wrapper.  Add 3-4 strips of the cooked chicken over cream cheese. Fold corner of egg roll wrapper closest to you up. Tuck the points under. Fold in and overlap the two opposite corners. Start to roll/twist up. Brush top corner with egg and roll up to seal. Brush eggroll twisters along all seams.

Add 3/4 cup vegetable oil to skillet over medium heat. Cook each egg roll twister about 30 seconds on each side or until lightly golden. Drain on paper towels. Slice each in half.

Serves 6

The crazy winds, rain and monster tornado twisters made the film "Twister" a hit. Storm chasers Dr. Jo (Helen Hunt) and Bill (Bill Paxton) shared a troubled marriage, and a taste for ugly weather. Visually, this is an exciting film. A must see for action-adventure fans.

Our recipe for Chipotle Chicken Twisters is bangin' with earth shaking flavors at every twist and turn. The film "Twister" inspired us to bring you this great taste - tornado style. They are simple to make with lighter ingredients, that helps make this recipe a winner!

Easy Ultimate Coffee Cinnamon Buns

Dough
Dissolve 1 (1/4 ounce) package dry yeast in 1 cup warm milk (heat in microwave for 1 minute) in large bowl, mix.  Add the following ingredients and mix well:
1 teaspoon vanilla
1/3 cup butter, softened
2 eggs, room temperature and beaten
1/2 teaspoon salt
1/2 cup sugar
4- 3/4 cups flour

To make the dough:
You can put ingredients in a standup mixer and using the dough hook, and mix everything together until a soft dough forms. Turn the dough onto a lightly floured surface and knead about 10 minutes.

Optional Method:  Make the dough the old fashion way by kneading it for 15 to 18 minutes (this is what I did). Place in bowl, cover dough and place on top of a warm oven (250 degrees). Leave for 2 hours.




After 2 hours the dough should be doubled in size.

Turn oven heat up to 375 degrees, which will be your baking temperature.



Roll the dough onto a lightly floured surface until it is approximately 21" long, 15" wide and 1/4" thick.

Brush 1/3 cup of softened butter over the dough using a pasty brush  Cover well.

Coffee Cinnamon Filling:

Combine the following ingredients and mix well:
1- 1/2  teaspoons ground coffee
1 cup packed brown sugar
2 Tablespoons ground cinnamon
2 Tablespoons flour
Optional, 1 cup raisins or 1 cup nuts, chopped

Sprinkle the the cinnamon filling over dough and smooth out. Lightly dust 2 Tablespoon flour over Coffee Cinnamon Filling (this prevents the filling from leaking during baking).



Working carefully from the long edge, roll the dough completely. Do not roll too tightly.

Lightly grease a 9 x 13 baking pan. You may want to use a second smaller pan, to keep from over crowding.
With a knife, light mark dough roll into 1-1/2 inch sections. Using a serrated knife, cut approximately12 slices. Place in baking pan. The unbaked dough should not touch each other before rising and baking. Cover pan with cloth, place on of the warm stove, and let rest and rise for 30 minutes.

Place Coffee Cinnamon Buns in oven. Bake for 20 to 25 minutes.





Remove from oven and let cool for 10 minutes. Drizzle icing over coffee cinnamon buns.

Icing
Using an electric mixer, mix the following ingredients on high speed for 2 minutes:
4 Tablespoons, butter, softened
1 cup powdered sugar
4 ounces low fat cream cheese
1/2 teaspoon vanilla
4 Tablespoons Kahlua' Coffee Liqueur

Serves 12

Blaxploitation is a film genre that started in the early 1970's. They were targeted to Black People and featured soundtracks of funk and soul music. Sexy and beautiful Pam Grier was the first lady of this film genre. She is still amazing with her work in "The L Word," and a host of films, including "Jackie Brown." In her starring role in "Coffy" she is a strong Black woman determined to get drug dealers and mobsters who are poisoning people in her city, including her precious little sister.  These movies are still a treat to watch. We have changed a lot since the 1970's, but good vs evil will always be around.

Pork Steak in Pomegranate Sauce








1 Pomegranate (remove seeds, set aside)
8 oz POM Wonderful Juice
1 pound pork shoulder blade steak
1/2 cup sweet petite carrots
1/4 cup onion, chopped
2 Tablespoons Worcestershire Sauce
1/2 teaspoon season salt
2 Tablespoons fresh parsley, chopped
Dashes black pepper
1 Tablespoon butter
2 Tablespoons flour, mix with 1/2 cup water, set aside
2 garlic cloves, minced
1 Tablespoon fresh Rosemary, chopped
4 small white mushrooms, slices

Over high heat using a 2 qt. sauce pan, add Pomegranate seeds, POM juice, pork steak, onions, garlic, Rosemary, season salt, black pepper, Worchestershire Sauce, parsley, butter. Bring to a boil, cover and lower heat to a simmer. Simmer for 20 minutes. Remove pork steak from pan and use a strainer to drain sauce in a bowl. Return pork steak back to pan with the drained sauce, and add mushrooms and carrots. Cover and continue simmering for 20 minutes. Turn up the heat to high and add flour and water mixture. Bring to a boil for 1 minute. Turn off heat.

Serves 2 to 3

Well made westerns are one of my guilty pleasures, and "3:10 to Yuma" is sure to become a classic. It is a remake of a 1957 film starring Glenn Ford. In this new version (2007) acting giants Russell Crowe and Christian Bale are the stars. One is a ruthless outlaw, and the other a family man who is trying to catch a break. Great story and action, good stuff here!

Our recipe for Pork Steak in Pomegranate Sauce is a powerhouse of flavors. The simmered Pomegranate Sauce has a hint of sweetness that works beautifully with pork. Our inspiration "3:10 to Yuma" is the perfect film to appreciate down-home hearty pork steak and vegetables. Those western guys needed a good meal that would give them the energy for all that horse riding and gun slinging.

Angel Hair Pasta and Shrimp




1 pound large shrimp, cleaned and tails removed
6 oz. angel hair pasta
1 cup chicken broth
1 Tablespoon Chili and Garlic Sauce
2 Tablespoons Oyster Sauce
1/3 cup green onions, chopped
1 cup tomatoes, chopped
1 Tablespoon soy sauce
1 Tablespoon butter
1/2 teaspoon garlic powder
1/2 teaspoon lemon pepper
2 Tablespoons, fresh parsley, chopped
1 Tablespoon corn starch (mixed with 3 Tablespoons water)
Dash of salt

Cook angel hair pasta according to package directions. Drain, add 2 teaspoons olive oil and a dash of salt. Set aside.

Season shrimp with dash of salt, garlic powder and lemon pepper. Add butter to sauce pan over medium high heat. Add shrimp, stir and cook for 3 minutes. Turn up heat to high and add chicken broth, Chili and Garlic Sauce, Oyster Sauce, green onions, tomatoes, soy sauce, and corn starch. Let boil for 1 minutes, reduce to simmer for 2 minutes.

Gently combine shrimp mixture with angel hair pasta. Place on serving dish and add fresh parsley.

Serves 4

The Best Egg Rolls Ever!

Happy New Year!







3 oz. prosciutto ham, chopped
1 cup portabello mushrooms, cleaned and chopped
1/4 cup green onions, chopped
1-1/2 teaspoon Chili Garlic Sauce
1 Tablespoon soy sauce
1-1/2 cup bok choy, chopped
1 cup cooked white rice
1 Tablespoon olive oil
1 teaspoon corn starch

dash of salt
1/4 cup vegetable oil
8 egg roll wrappers
1 egg, beaten (for closing egg rolls)

Add olive oil to skillet. Add prosciutto ham and cook over medium high heat for 5 minutes. Add portabello mushrooms, green onions, chili garlic sauce, soy sauce, and bok choy. Stir and cook for 3 minutes. Remove from heat and drain. Add corn starch and stir. Add cooked rice and a dash of salt and stir. Set aside.

How to Make Egg Rolls:
Place egg roll skin in front of you to form a diamond shape. Add 4 tablespoons of mixture slightly below center of egg roll skin. Fold corner of egg roll skin closest to filling over filling, tucking the points under. Fold in and overlap the two opposite corners. Brush fourth corner with egg and roll up to seal.  Brush eggroll along all seams.

Add vegetable oil to skillet over medium heat. Cook each egg roll about 45 seconds on each side or until lightly golden. Drain on paper towels.
Serves 8.
