Dough
Dissolve 1 (1/4 ounce) package dry yeast in 1 cup warm milk (heat in microwave for 1 minute) in large bowl, mix. Add the following ingredients and mix well:
1 teaspoon vanilla1/3 cup butter, softened
2 eggs, room temperature and beaten
1/2 teaspoon salt
1/2 cup sugar
4- 3/4 cups flour
To make the dough:
You can put ingredients in a standup mixer and using the dough hook, and mix everything together until a soft dough forms. Turn the dough onto a lightly floured surface and knead about 10 minutes.
Optional Method: Make the dough the old fashion way by kneading it for 15 to 18 minutes (this is what I did). Place in bowl, cover dough and place on top of a warm oven (250 degrees). Leave for 2 hours.
After 2 hours the dough should be doubled in size.
Turn oven heat up to 375 degrees, which will be your baking temperature.
Roll the dough onto a lightly floured surface until it is approximately 21" long, 15" wide and 1/4" thick.
Brush 1/3 cup of softened butter over the dough using a pasty brush Cover well.
Coffee Cinnamon Filling:
Combine the following ingredients and mix well:
1- 1/2 teaspoons ground coffee
1 cup packed brown sugar
2 Tablespoons ground cinnamon
2 Tablespoons flour
Optional, 1 cup raisins or 1 cup nuts, chopped
Sprinkle the the cinnamon filling over dough and smooth out. Lightly dust 2 Tablespoon flour over Coffee Cinnamon Filling (this prevents the filling from leaking during baking).
Working carefully from the long edge, roll the dough completely. Do not roll too tightly.
Lightly grease a 9 x 13 baking pan. You may want to use a second smaller pan, to keep from over crowding.
With a knife, light mark dough roll into 1-1/2 inch sections. Using a serrated knife, cut approximately12 slices. Place in baking pan. The unbaked dough should not touch each other before rising and baking. Cover pan with cloth, place on of the warm stove, and let rest and rise for 30 minutes.
Place Coffee Cinnamon Buns in oven. Bake for 20 to 25 minutes.
Remove from oven and let cool for 10 minutes. Drizzle icing over coffee cinnamon buns.
Icing
Using an electric mixer, mix the following ingredients on high speed for 2 minutes:
4 Tablespoons, butter, softened
1 cup powdered sugar
4 ounces low fat cream cheese
1/2 teaspoon vanilla
4 Tablespoons Kahlua' Coffee Liqueur
