Joyous Asian Chicken



6 chicken thighs, boneless, skinless, fat removed and cut into strips
2 garlic cloves, minced
3 Tablespoons soy sauce
2 teaspoons chili and garlic sauce
1 teaspoon cornstarch
Dashes salt and black pepper

Place the ingredients above in a mixing bowl, stir, and refrigerate for at least 30 minutes.

1 cup red and green bell peppers, cut into strips
1/4 cup red onions, cut into strips
2 Tablespoons oyster sauce
2 teaspoons cornstarch mixed with 1/2 cup water

2 Tablespoons vegetable oil

Heat wok or large saute pan over high heat. Add vegetable oil. After pan is hot add chicken. Stir-fry for 5 minutes. Add bell peppers, onions, oyster sauce, and cornstarch. Stir over high heat. Lower heat, cover and continue cooking for 5 minutes.

Optional, add dashes of soy sauce.
Optional, serve with healthier grain noodles or brown rice.

"The Joy Luck Club" is a beautiful film, rich in the Asian culture. Through a series of flashbacks, young Chinese women born in the United States and their mothers born in China, give us a look into their heart-wrenching past.. The mother/daughter relationship is bent, but not broken.

"The Joy Luck Club" is one of my all-time favorite films.  We celebrate it with our Joyous Asian Chicken, that is full of rich flavors, but a "Healthy Delight." Fast, inexpensive, gourmet quality, and with all the love our ladies of "The Joy Luck Club" can bring.

Strawberry and Pineapple Island Cocktail




1/2 cup Malibu Caribbean Rum, Mango Flavor
1/2 cup pineapple juice (no sugar)
12 frozen strawberries
Optional, 1 tablespoon sugar
Optional, garnish with strawberries and pineapple chunks

Place all the ingredients above in a blender and blend on high speed for all least 30 seconds. Place in two (cocktail, tumbler or dessert) glasses, and chill in freezer for 20 minutes. Add garnishes.

The all star cast includes Janet Jackson and Tyler Perry. Its all about four married couples working on their marriage and their friendships. Chipotle Chicken Breast - Working Girl Style

A No-Fuss Way for a Gourmet Tasting Meal for the Working Girl





2 chicken breast, rinsed (bone-in breast with excess fat removed are pictured)- for fewer calories and fat use boneless and skinless chicken breast

4 Tablespoons Chipotle Pepper Rub Seasoning (use 2 Tablespoons, if using boneless and skinless chicken breast

2 Tablespoons olive oil

10 Minutes Preparation Time - Before leaving for working, place each chicken breast (2) in about 8 inches of foil. Add 1 tablespoons of olive oil and 2 tablespoons of Chipotle Pepper Rub Seasoning to both sides of breast. After rubbing well, fold up the foil on each breast. Place in refrigerator until you return home from work.

When you return home preheat your oven to 375 degrees

Place both foiled breast in a baking pan and bake for 45 minutes (30 minutes for boneless and skinless). Remove from oven and open up foil. Turn up oven to 400 and continue to bake and brown for 10 to 12 minutes.

Remove from oven and serve with a side dish of vegetables or salad
