Fried Green Tomatoes (1991)

"Fried Green Tomatoes" is two stories in one. First a menopausal and overweight housewife Evelyn (Kathy Bates) who's life is spinning out of control. Then an elderly, wise and lovable woman name Ninny (Jessica Tandy) who lives in a nursing home. The two women meet and the tale of Idgie and Ruth from Ninny's past is told. Our recipe for Fried Green Tomatoes pays tribute to the "Whistle Stop" diner portrayed in the film. Please enjoy the video clip below. It shows when Idgie and Ruth opened the diner. Idgie's first attempted at making fried green tomatoes was a bust, but we have put our touches on it and now its the "bomb."

From J.R.R.Tolkien's trilogy we spotlight the Oscar Awarded film "The Lord of the Rings." This is storytelling at its very best. Beautiful film with important messages for all of us. Our recipe for Lord of the Onion Rings was our quest (as Frodo Baggins was for the one true ring) for a great tasting and beautiful onion ring that could be done easily by home cooks. My, Oh My, it's corn and crab pie!
corn and crab pie1 can Mexicorn – 11 oz can
½ jalapeno or Serrano pepper (remove seeds) finely chopped
8 oz fresh lump or claw crab meat
1 package Jiffy or other corn muffin mix (8 ½ oz)
2 eggs, room temperature
2 tablespoons chopped red onion

Optional, 10 cherry tomatoes

Preheat oven 350 degrees.

Mix all ingredients above, except butter in a large mixing bowl. Stir gently and only until ingredients are blended together. Use a well (9 inches) greased (solid or liquid oil) iron skillet or a metal baking pan (if pan is non-stick, still grease lightly). Pour in mixture, even out and bake in a preheated 350 degree oven for 40 to 45 minutes. Remove from oven and let cool slightly (5 minutes) and loosen sides with a knife. Place large plate over skillet or pan, turn over and tap top of pan to loosen. Your corn and crab pie should rest nicely on plate. Spread butter over top crust.
Optional, 10 cherry tomatoes - cross cut tops and place around pie.

This dish is wonderful with chicken, turkey, beef, or pork and can stand alone as a satisfying main dish.

Pulp Fiction (1994)

Quentin Tarantino's masterpiece "Pulp Fiction" tells the story of two hit men Jules and Vincent played by acting giants Samuel L. Jackson and John Travolta. Bruce Willis also stars as Butch, an over the hill boxer in all kinds of trouble. Please check out the video below set in a diner that's being robbed, and the thieves have the misfortune of running into Jules and Vincent.

In "Pulp Fiction", the diner's special that day could have been our recipe, "My Oh My, It's Corn and Crab Pie." Jules was enjoying every savory bit, when some dumb ass decides to stick a gun in his face. Huge mistake, never come between a man and his corn and crab pie!

Potato Salad

Quick, Super Easy and Delicious, this potato salad has heart and soul!
classic potato salad
Soul Food (1997)

“Soul Food” is one of those movies when you watch it, you feel the love and history, good or bad, with the family. Early in the movie Mama Joe (Irma P. Hall) is in the kitchen with her three daughters cooking Sunday dinner, which is a tradition in their family. They share laughter and spit some fire, but it’s all good!!

My recipe for Heart and Soul Potato Salad is a tradition in my family, just like Mama Joe’s. All the great food at the Sunday table is much more than just sharing a meal. It’s a time for families to share each other. Heart and Soul Potato Salad on your dinner table or picnic outing will certainly bring your family and friends together.

5 medium size red potatoes
2 eggs
½ cup mayo (you can use a lighter mayo, if preferred)
2 tablespoons sweet pickle relish
1 tablespoons finely chopped red onion
1 teaspoon yellow mustard
¾ teaspoon of bottled celery seed
1 tablespoon light vegetable oil (I prefer Wesson)
Dashes of salt and pepper , to taste
Optional: Dashes of paprika on top of salad

Boil potatoes in water until tender (large folk should glide through). Let potatoes cool, then chop into mouth size cubes.

Boil eggs. After eggs have cooled, peel and diced into small cubes.

In a large bowl lightly mix all of the ingredients above. Keep refrigerated until ready to serve.

Serve on serving plate lined with lettuce, spoon classic potato salad onto plate. Optional: Sprinkle with paprika.

Serves 5 to 6.
