Lemon and Herb Roaster Chicken with Country Lemon Sauce








"Bridesmaids" is without question the funniest movie released this year. A group of young woman take us movie fans on a crazy, comical, and fun ride through the rituals of matrimony. Kristen Wiig from SNL plays Annie a maid of honor who is facing some issues of her own. A must-see for comedy buffs.

Our recipe for Lemon and Herb Roaster Chicken with Country Lemon Sauce celebrates all things perfect for a bride's special day. Down-home goodness done with class and style, like our "Bridesmaids," good to the very end!

Preheat oven to 350 degrees
1 Roaster Chicken (over 5 lbs) clean, and remove excess fat, pat dry - Set aside chicken neck, liver, and gizzard.

Rub for Roaster Chicken
Mix in a bowl - 
3 Tablespoons olive oil
2 Tablespoons chopped fresh parsley
1 Tablespoon Marjoram
1-1/2 teaspoon salt
Juice from 2 lemons
2 Tablespoons lemon zest
1/2 teaspoon freshly grounded black pepper

For bottom of roaster -
3 cups water
2 Tablespoons liquid smoke 

Use your hands to rub all the mixture on the inside and outside of roaster chicken.  Place in roaster pan on the rack. Add water and liquid smoke to bottom of pan. Cover and bake for 1-1/2 hours. Remove cover and return to oven for 30 minutes.

Country Lemon Sauce
While roaster chicken is baking, prepare the Country Lemon Sauce.
Add the the following to a large sauce pan over high heat.

4 cups water
Neck, liver and gizzard from roaster chicken
1/3 cup chopped onions
1/3 cup chopped celery
3 chopped garlic cloves
1/3 teaspoon salt
1/2 teaspoon black pepper
1 cup chicken stock

After the pot boils, reduce heat and let cook for 1 hour.

After the hour, remove neck, liver and gizzard. Chop meat and remove all bones, set aside.

Add the following to a clean sauce over high heat:

2 Tablespoons butter
2 Tablespoons flour
1 teaspoon lemon zest
3/4 teaspoon lemon pepper
Stir consistently. After butter browns slightly, add the neck, liver, gizzard and all the liquid from the Country Lemon Sauce pot. Bring to a boil. Lower heat and let simmer for 12 minutes.

Serves 8

The Best Fried Chicken Ever!

Our soulful and outrageously deliciously recipes are from millions of Black family homes, but we always put our special twist on everything! We start February with the film "Claudine" starring the beautiful and talented Diahann Carroll and James Earl Jones. Our first recipe celebration is The Best Fried Chicken Ever!  Our chicken will take on any of your favorite carry-out chicken brands. Better taste at a much lower cost. Please enjoy this clip where Claudine and Roop have carry-out chicken rather than the fancy restaurant meal he promised her. Just as her daughter predicted "Its gonna wind up chicken anyway."

PRINT THIS RECIPE



4 chicken pieces, cleaned with excess fat removed (Use your favorite parts of the chicken. I used chicken thighs)
1 egg, slightly beaten
1/2 teaspoon Season Salt
Pinch of salt
1/8 teaspoon Cayenne Pepper, grounded
1/4 teaspoon Thyme Leaves
1/8 teaspoon Paprika
1/2 teaspoon Lemon Pepper
1 cup all purpose flour
1/4 teaspoon Emeril's Original Essence Seasoning
1 -1/2 cup vegetable oil

Add egg, chicken, Season Salt, pinch of salt, Cayenne Pepper, Thyme Leaves, Paprika, and Lemon Pepper to a mixing bowl. Mix well. Set aside.

Add flour and Emeril's Original Essence Seasoning to a bowl. Mix. Add chicken one piece at a time. Cover well and shake off excess.

Heat large skillet over medium high heat. Add vegetable oil. Heat oil until hot. Add chicken. With a large skillet you should be able to fry 4 pieces without over crowding pan. Keep chicken frying over medium heat (don't cook too fast). Cook on each side for approximately 13 minutes, there should be no bleeding. Chicken should be a beautiful golden brown.

Remove chicken from pan and drain on paper towel.

Serves 4

Game Day Chicken Chimichangas - 3 Ways


Game Day Chicken Chimichangas - 3 Ways is the perfect food for football fans everywhere. It's a crowd pleaser that will have everyone cheering "touchdown!" This recipe will make up to 6, but will serve 12 when sliced. You may want to do multiple batches for your hungry crowd. Please enjoy our featured film "The Longest Yard" with Adam Sandler and Chris Rock. Lots of laughs and some football!

Marinate Chicken:
  • 4 boneless, skinless chicken thighs, cut into 1 inch cubes
  • 1 Tablespoon Chipotle Pepper Rub
Rub chicken with Chipotle Pepper Rub in a mixing bowl. Cover and refrigerate for at least 2 hours. 


Cook Chicken: 
  • 2 Tablespoons olive oil
  • 1 garlic, minced
  • Juice from 1/2 lime
  • 1 teaspoon hot sauce
  • 1 Tablespoon fresh cilantro, chopped
  • 1/3 cup water mixed with 1 Tablespoon flour
Heat olive oil in a large saute pan over medium high heat. Stir in chicken.  Add garlic, lime juice, hot sauce, and cilantro. Stir for 5 minutes. Turn up heat to high and stir in water and flour mixture. Cook 3 additional minutes. Set aside and let cool slightly.


Assemble Chicken Chimichangas: 

  • 6 flour tortillas

Preheat oven to 300 degrees.  Wrap tortillas together in foil.  Bake in the oven for 5 minutes.


To warmed tortilla, add:  
  • 1/2 cup cooked chicken
  • 1 Tablespoon green onion, chopped
  • Pinch of cilantro, chopped 
 Add the following additional ingredients for mild, spicy, or hot chimichangas:


Mild
  • 2 Tablespoons refried beans 
  • 1/4 cup cheddar cheese, shredded
Spicy
  • 2 Tablespoons medium heat chunky salsa 
  • 1/4 cup Monterey Jack Cheese, shredded
Hot
  • 1 Tablespoon refried beans 
  • 1/4 cup Monterey Jack Cheese, shredded
  • 1 Tablespoon medium heat chunky salsa
  • 1 Tablespoon jalapeno peppers, chopped
Lift the bottom edge of the tortilla and roll it over the filling to secure it. Fold in both sides and continue rolling until you reach the opposite end. Secure with a toothpick to close. Repeat with remaining tortillas.  Set aside.


Fry Chicken Chimichangas:
  • 1 cup of vegetable oil for pan frying
In a large skillet, heat vegetable oil over medium high heat.  Slowly place chimichangas in skillet and cook 2 minutes on each side or until golden brown. Remove from oil, drain on paper towels.


Optional - Slice chicken chimicangas in half at an angle and serve with one or all of the following:
Warm refried beans, light sour cream, guacamole, chopped tomatoes, black olives, sliced jalapeno peppers, chopped lettuce, and pinches of fresh cilantro.

Stuffed Chicken Breast with Tomato & Butter Sauce

Happy Halloween from Reel Good Recipes!




6 Chicken Breast Tenderloins - Place in a baggie and flatten each breast with a kitchen hammer/mallet, rolling pen, or other heavy object. Brush with olive oil, add dashes salt and black pepper and 1/2 teaspoon poultry seasoning. Set aside in refrigerator.

Stuffing
1/4 cup Leeks, chopped
1/4 cup red onion, chopped
3 cooked bacon strips, chopped
3/4 cup plain bread crumbs
1/3 cup corn, fresh or frozen
1 teaspoon Sage
1 Tablespoon fresh Parsley, chopped
1/2 cup chicken broth or stock
1 Tablespoon butter
Dashes salt and black pepper

Preheat oven to 350 degrees.

Add butter to a saute pan. Add Leeks and red onions. Saute for 3 minutes. Add bacon, bread crumbs, corn, Sage, Parsley, chicken broth and salt and black pepper. Stir. Turn off heat

Take chicken from refrigerator. Add 6 Tablespoons of stuffing to each chicken breast. Spread-out. Roll gently and loosely lengthwise. Place in baking dish, cover and bake for 30 minutes.





Tomato & Butter Sauce
Drippings from chicken baking dish
1 Tablespoon butter
1 skinless tomato, chopped
1Tablespoon soy sauce
1 Tablespoon corn starch
6 tablespoons water
Dashes black pepper

Add sauce ingredients to a saute pan. Boil. Lower heat to a simmer and cook for 2 minutes.

Optional: Top with sprinkle of chopped Parsley.

Serves 6

Spicy Superbowl Chicken Wings



Congratulation New Orleans Saints




10 chicken wings

1 jalapeno pepper, minced
1 teaspoon orange zest
Juice from 1 orange
Juice from 1/2 lemon
1 Tablespoon Chili Garlic Sauce
1 Tablespoons fresh Rosemary, chopped
1/4 teaspoon salt
Dashes black pepper
4 Tablespoons olive oil

Add all the ingredients above to a mixing bowl. Mix and cover chicken wings completely. Pour all these ingredients into a large plastic zip lock baggie. Refrigerate for 3 hours.

Preheat oven to 375 degrees.

Spray cookie sheet with Pam or other non-stick spray. Place chickens wings on cookie sheet, and discard the marinated. Bake for 40 minutes and turn each chicken wing over. Continue baking for an additional 15 minutes.

Remove from oven and place on paper towel.

Optional, add dash of salt

Serve with salsa, tortilla chips, strips of celery, red and green bell peppers.

Reel Good Recipes would like to congratulation New Orleans Saints and Indianapolis Colts for making it to the "big game," Superbowl XLIV in Miami on February 7, 2010.  Superbowl Sunday is a holiday for myself and millions of other fans. Our recipe for Spicy Superbowl Chicken Wings will give everyone something to cheer about, even if your favorite team isn't winning. This recipe is full of bold flavors, and served with salsa, peppers and tortilla chips will score a "touchdown." Serve our wings at your Superbowl party and you will be the big winner.

My hometown is Washington DC, and the Washington Redskins will always be my favorite team. They are three times Superbowl Champions. Please enjoy this video clip from Superbowl XXII. Quarterback Doug Williams was named the game MVP.  He is a great quarterback who had to overcome more than his share of obstacles. Through hard-work, prayer, and sheer determination, he made a way out of no-way. He got injured during the Superbowl, and had to reached down deep in his heart and soul. It was truly a miracle. Not only did he overcome his injury, but he broke scoring records during the second quarter of the game. Sounds like a great sports movie, but its true life!

Greek Chicken with Oregano and Olive Oil




3 pound chicken, cut-up (clean and remove excess skin and fat, pat dry)
1/2 cup olive oil
1/4 teaspoon oregano flakes
Juice from 2 lemons
Dashes of salt
Dashes of oregano
2 Tablespoons olive oil
Juice from 1/2 lemon
1 Tablespoon parsley flakes
6 white potatoes, peeled, washed and cut quarter lengthwise

Place chicken in a bowl and add 1/2 cup olive oil, 1/4 teaspoons oregano flakes, and dashes of salt. Use your dry hands to rub ingredients on chicken. Add juice from 2 lemons, mix and place in a large plastic freezer bag. Refrigerate for at least 3 hours.

Preheat oven to 350 degrees

Place marinated chicken with juices in roaster pan. Bake uncovered for 35 minutes. Remove from oven and add the potatoes. Add juice from 1/2 lemon, parsley flakes, 2 Tablespoons of olive oil and dashes of oregano and salt. Return to oven and continue baking uncovered for 40 minutes. Chicken should be lightly golden and potatoes fork tender.

Optional, serve with green salad and feta cheese on the side.

Serves 6

Chipotle Chicken Twisters








Add the following ingredients to a bowl, mix. Marinate in the refrigerator for 1 hour.
2 chicken breasts, boneless and skinless. Rinsed, patted dry and cut into thin strips
2 Tablespoons Chipotle Pepper Rub
1 Tablespoon olive oil

Mix these ingredients in a bowl, and set aside:
4 ounces low fat cream cheese
2 celery stalks with leaves, finely chopped
1/4 cup onion, finely chopped
2 garlic cloves, minced
1/3 cup fresh parsley
Juice from 1 lime
Dash salt and black pepper

12 egg roll wrappers
1 egg, beaten in bowl. Set aside
1 Tablespoon vegetable oil to stir-fry chicken
3/4 cup vegetable oil to cook Chipotle Chicken Twisters in wok or fry pan

Heat wok or fry pan over high heat. Add 1 Tablespoon vegetable oil. Stir-fry chicken for 4 minutes. Place in a bowl. Let cool for 10 minutes.

To assemble the Chipotle Chicken Twisters:
Use 2 egg rolls for each twister


Place the 6 egg roll wrappers in front of you to form a diamond shape. Spread 1 tablespoon of cream cheese mixture onto each egg roll wrapper.  Add 3-4 strips of the cooked chicken over cream cheese. Fold corner of egg roll wrapper closest to you up. Tuck the points under. Fold in and overlap the two opposite corners. Start to roll/twist up. Brush top corner with egg and roll up to seal. Brush eggroll twisters along all seams.

Add 3/4 cup vegetable oil to skillet over medium heat. Cook each egg roll twister about 30 seconds on each side or until lightly golden. Drain on paper towels. Slice each in half.

Serves 6

The crazy winds, rain and monster tornado twisters made the film "Twister" a hit. Storm chasers Dr. Jo (Helen Hunt) and Bill (Bill Paxton) shared a troubled marriage, and a taste for ugly weather. Visually, this is an exciting film. A must see for action-adventure fans.

Our recipe for Chipotle Chicken Twisters is bangin' with earth shaking flavors at every twist and turn. The film "Twister" inspired us to bring you this great taste - tornado style. They are simple to make with lighter ingredients, that helps make this recipe a winner!

Best Slow Cooker Chicken Ever!


PRINT THIS RECIPE

1 whole 3 pound chicken, cleaned with excess fat removed

1 teaspoon Better Than Bouillon Chicken Base mixed with 1 cup water

1/2 Tablespoon garlic powder

1 teaspoon Season All

1 teaspoon spice blend (I like Trader Joe's 21 Season Salute)

1/2 teaspoon paprika


Add Better than Bouillon and water to slow cooker. Cover both sides of chicken with remaining ingredients. Place chicken in slow cooker and cook on high speed for 4 hours.
Remove from slow cooker and serve on serving place with (optional) red potatoes
Optional, add 6 red potato halves to chicken.

Serves 5 to 6

"The Matrix" is the story of a computer hacker who searches for the truth behind the world known as the Matrix. If you like action films, and I do, "The Matrix" is the top of the line. The slow motion sequences alone are priceless.

Our recipe for the Best Slow Cooker Chicken Ever is super easy, super moist, and super delicious. The slow cooker does all the work. "The Matrix'" has several breathtaking slow motion scenes that inspired our chicken recipe. It showed us that slow is sometimes the only way to go.

Chicken Wings 2-Ways (Chick Wings)

(Use first and second wing portions, also called "Party Wings")
For Baked Wings:
10 chicken wing pieces
1/3 cup low-fat zesty Italian dressing
1 tablespoon liquid smoke
Dashes of season salt
Dashes of black pepper
Pam Spray to cover baking pan
Marinate 10 wing pieces in low-fat zesty Italian dressing, liquid smoke, and dashes of season salt and black pepper, mix well. Marinate at least 1 hour.
Preheat oven to 365. Spray baking pan with Pam, place chicken on pan and cook uncovered (turn after 30 minutes) for about 40 minutes or until golden brown.

For Fried Wings:
1 egg
1/2 cup low-fat buttermilk
1/2 teaspoon each Essence of Emeril
1/2 teaspoon season salt
1/2 teaspoon lemon pepper
10 chicken wing pieces
1 cup flour in mixing bowl, add dashes of Essence
1- 1/2 cup vegetable oil

In a bowl, add egg, low-fat buttermilk, Essence of Emeril's, season salt and lemon pepper, mix well. Add chicken wing pieces, mix and cover well. Drain egg and buttermilk mixture from chicken. Cover each wing with seasoned flour well.
Preheat skillet with vegetable oil over medium heat. Don't crowd pan when you place the chicken wings in the skillet. Cook about 13 minutes, turn over, and continue cooking another 10 minutes. Cook until brown, but not too dark. Total time should be about 23 minutes per batch.
White Chicks (2004)



"White Chicks" film is funny, 2 ways, Shawn and Marlon Wayans. They are FBI agents who pose as rich "white chicks" for a case. The laughs keep coming and our recipe for Chicken Wings 2-Ways brings you chicken wings baked with zesty delicious flavors and fried chicken wings that are tender inside and crusty "sick" goodness on the outside. Stir Fry Chicken and Vegetables

"Stir Crazy" has Richard Pryor in his prime. We have provided the video clip below with one of my favorite scenes. This totally funny film was the inspiration for our recipe Stir Fry Crazy Delicious Chicken and Vegetables. Like the movie, we stirred up a fun and yummy combination just like Richard Pryor and Gene Wilder!






1 - 8 oz. package spaghetti
2 Tbs. seasame seed oil

Mix the following 7 ingredients, cover and refrigerate at least 2 hours:

4 boneless, skinless chicken breasts - cut into thin strips

2 spring onion chopped

2 garlic cloves, finely chopped

1 tablespoon soy sauce

1 tablespoons olive oil

Dash of hot sauce

Dashes of salt and pepper

____________________
1 tablespoon of vegetable oil for wok

1/3 cup thinly sliced baby carrots

1/2 cup chopped fresh spinach

1 tablespoon black bean garlic sauce

1 tablespoon soy sauce

1/2 jalapeno pepper (seeds removed), finely chopped

2 cups water, mixed with 2 tablespoons flour, whisk until smooth

Cook spaghetti according to package directions, drain, add 2 tablespoon sesame seed oil and dashes of salt and pepper. Set aside

Preheat oil in a non-stick wok or large fry pan over medium high heat. Add chicken, carrots and jalapeno pepper, stirring until color brightens, about 5 minutes. Add the spinach, black bean garlic sauce, soy sauce, and flour mixture. Stir over high heat for 2 minutes, then lower heat, cover and let simmer for 2 more minutes.

Combine chicken and spaghetti in large serving bowl.

Serves 4

Wedding Chicken with Asparagus & Pasta

chicken asparagus pastajuice of 1/2 lemon
2 garlic cloves, minced
1 lb chicken breasts, cut into bite sized pieces
1 package penne pasta
1 bunch asparagus, washed and cut into 2" pieces
1 Tbs butter
1 cup chicken broth
1/2 cup white cooking wine
1/2 cup milk
1/4 tsp black pepper
4 oz cream cheese, cubed
1 Tbs flour

Combine lemon juice, olive oil and garlic. Add chicken. Toss to coat. Put in refrigerator.

In a large pot, cook pasta until soft but still firm, about 8 minutes. Do not overcook. Drain water and set aside. Do not cover.

Cook asparagus in boiling water for 3 minutes or until bright green and still firm. Drain water and set aside. Do not cover.

Melt butter in a large skillet over medium high heat. Add chicken, stirring constantly until cooked through and no longer pink. Remove chicken from skillet, keeping juices in skillet.

Stir in chicken broth and white wine. Reduce heat, let simmer 5 minutes.

Stir in milk, cream cheese and pepper. Add 2 Tbs water to 1 Tbs flour to make a paste. Stir into skillet. Reduce heat to low, let simmer 5 minutes.

To the pasta pot, add sauce, chicken and asparagus. Stir until well combined. Serves 6 to 8.

Muriel's Wedding (1994)

Muriel lives in Porpoise Spit, Australia (yes Porpoise Spit), and all she wants in life is to be a bride. This film is a gem, with laughs and sorrow from beginning to end. Muriel is a huge ABBA fan and I love the musical number between Muriel (Toni Collette) and Rhonda (Rachel Griffith). One of my favorite scenes is on the video below with the "mean girls" attaching Muriel and Rhonda comes to her rescue.





Our recipe for Wedding Chicken with Asparagus & Pasta is inspired by "Muriel's Wedding." This elegant and delicious dish is perfect for a bride's special day. It's wedding perfect yes, but will be appreciated by dinner guess and family alike!

Cowboy Chicken

Whole Chicken and Salsa Southwestern Style

Inspired by Brokeback Mountain (2005)



Brokeback Mountain is a memorable movie in many different ways. One of my favorite scenes is when Ennis’s ex-wife finally confronts him at Thanksgiving about Jack Twist. Ennis’s emotions are a volcano that just explodes. He could never handle his own feelings, and no way was he going to deal with Alma’s. Lots of real history and pain with this couple.



This Cowboy Chicken recipe gets its name from its' hearty cowboy style, but you don’t have to be a cowboy to love this dish. If you're searching for down home on the range, knee slappin' good, kick your butt favor, you’ve found it! You'll be sayin' "Cowboy Chicken, I wish I knew how to quit you!"


1 whole chicken (cut-up and cleaned, remove skin, sprinkle with 1 teaspoon black pepper

1 cup of premium thick and chunky salsa (medium heat)

2 slices thick cut bacon

1 tablespoon chopped fresh rosemary leaves or teaspoon of chopped bottled rosemary

2 bay leaves

2 tablespoons liquid smoke

1/4 cup sliced ripe black olives or green olives with pimentos, drained 2 tablespoons flour mixed with ½ cup water

In a large non-stick pot, over medium high heat cook bacon until crisp. Remove bacon and set aside.

Add chicken to the pot. Cook on both sides in bacon drippings, about 10 minutes on
each side.

Add rosemary, bay leafs, liquid smoke, and salsa to pot, stir. Increase heat and let boil, then lower to a simmer, cover, and cook for 35 minutes.

Turn up heat and add flour and water to thicken. Add olives. After pot starts to boil, lower heat to a simmer and cook for 5 more minutes.

Remove bay leafs.

Serve over Rice, Quick Grits, hearty breads or pasta. Optional: Serve with bacon crumbled on top.

Serves 6.

Blue Cheese Crusted Chicken

Inspired by the movie "The Blues Brothers" (1980)




The movie opens with Jake (John Belushi) being released from jail and his brother Elwood (Dan Aykroyd) is waiting for him in an old beat-up black and white cop car. Right there and then you know – this is going to be a fun ride! Along with Saturday Night Live and Animal House, this movie is John at his best.





This recipe for Blue Cheese Crusted Chicken is a festival for your taste buds! Like the Blues Brothers, what you see when you prepare this festival is what you get. The Blue Brothers never offered any apologies for their colorful and delightful antics and neither does Blue Cheese Crusted Chicken – you will sing its praises!!


Topping:
½ cup Progresso Bread Crumbs (unseasoned/plain)
1/3 cup plus 1 Tablespoon blue cheese crumbles
3 Tablespoons butter, melted
½ teaspoon garlic powder

6 chicken thighs or 4 chicken breast, skinless boneless
1 can Pillsbury Reduced Fat Refrigerated Crescent Dinner Rolls
2 Tablespoons olive oil
1 Tablespoon butter, melted
Salt and pepper to taste
Parsley flakes for garnish



Preheat oven to 375 degrees. In a small mixing bowl, combine breadcrumbs, blue cheese, butter and garlic powder. set aside.

Heat olive oil in a large non stick skillet over medium heat. Sprinkle chicken with salt and pepper, add to skillet. Cook chicken about 8 minutes per side or until cooked thoroughly. Remove chicken, drain on paper towels. Place chicken on a large baking sheet. Top each piece with 2 tablespoons of the cheese topping, pat down evenly.

Open Pillsbury Crescent Dinner Rolls, pull apart into 8 rolls. Wrap one crescent roll around each piece of chicken, pressing gently to hold. Bake remaining rolls according to package directions.

Bake in 375 degree oven for 15 minutes or until golden brown. Remove from oven and brush each crescent with melted butter and sprinkle with parsley flakes.
