New Orleans Cajun Salmon Cakes



1 (5.75 oz) Zatarain's New Orleans Salmon Cake Mix
1 (14.75 oz) can Red Salmon (remove any bones)
1/2 teaspoon Cajun seasoning
1 egg
1/2 cup water
1/2 teaspoon crushed red peppers
1 teaspoon mustard
1/3 cup light mayo
2 Tablespoons chopped onion
2 Tablespoons chopped green bell pepper

(1/4 cup of vegetable oil for frying)

Add all the ingredients above (except vegetable oil) to a mixing bowl. Mix well and refrigerate for at least an hour.

Preheat fry/sauce pan with 1/4 cup vegetable oil over medium hight heat. Make 8 to 10 salmon cakes. Lightly fry each about 2 minutes on each side. Place on paper towel.

Optional, serve with light salad and/or a warm hamburger bun
