Fresh Herb Roasted Cornish Hens


2 Cornish Hens (cleaned inside and out) set aside

Rub for Cornish Hens, mix in a bowl
2 tablespoons olive oil
1 tablespoons chopped fresh basil
1 tablespoons chopped fresh rosemary
1 tablespoons chopped fresh parsley
1/4 teaspoons onion powder
1/4 teaspoons garlic powder
1/2 teaspoons season salt
1/4 teaspoons black pepper

After Cornish Hens have cooked, use the pan drippings with the following ingredients:
1 cup chicken broth
3/4 cup water mixed with 2 tablespoon of flour

Preheat oven 375

Use your cleaned hands to rub both Cornish Hens inside and out with the Cornish Hen Rub. Place both Cornish Hens on roaster rack in roaster pan. Add 1/2 cup water to bottom of roaster. Roast without the cover for 1 hour and 15 minutes. Be sure to check roaster half way through roasting to make sure there is still liquid in the bottom (if not add 1/2 cup water).

Remove roaster from oven and remove Cornish hens and rack.

Place roaster on stove burner and turn on high heat. Add to the roast drippings, 1 cup chicken broth, flour and water mixture. Lower heat after it boils to a simmer and let simmer for 3 minutes.

Serve Cornish hens on serving platter with herb sauce around birds.
